Aymeric Paillard's wines are a reflection of a place and a philosophy: that of a winemaker who listens to the land before speaking for it.
Each vintage is a sensitive interpretation of granite, wind, and time. Here, Syrah reigns supreme, but it is the winemaker's hand—discreet and precise—that reveals its grace.
Saint Joseph “Petit Père” 2021
This is the flagship wine of the estate, born from the steep slopes of Lemps and Sarras, on granite soils mixed with quartz and gneiss.
The harvest is done by hand, the grapes are partially destemmed, and fermentation is carried out with indigenous yeasts.
The long aging process (nearly two years) in old barrels rounds out the structure without masking the fruit.
Petit Père is a sincere, taut and vibrant Syrah — with aromas of black fruits, spices and violet — which combines depth and finesse.
A wine that is both delicate and grounded, just like Aymeric himself.

Cornas “Les Hauteurs”
On the stony hillsides of Cornas, the Syrah takes on a wilder dimension.
Here, the denser granite and the southern heat produce powerful wines, but Aymeric is careful to maintain a natural freshness.
Gentle winemaking and measured extraction give way to silky tannins, a straightforward palate, and a long finish, marked by stone and spice.
A Cornas of elegance and restraint — more whispered than proclaimed.
